Red Thumb fingerling potatoes are best suited for cooked applications such as roasting, grilling, steaming, boiling, and frying. They can be used halved or whole along with other fingerlings to make a roasted potato medley, or they can be steamed, smashed slightly, and then baked. Like many fingerlings, the Red Thumb holds its shape when cooked and makes an excellent salad potato. They can also be roasted with rosemary and olive oil and then caramelized for a rich side dish to serve with steak.
Potatoes can be planted in early to mid- May, as long as the ground can be worked and the soil is starting to warm. The potato tubers are tender to the cold in transport so seed potatoes are available for pick up at the farm in Mid-April onwards.
